Indulge in this cool and creamy Butterscotch Lush with a pecan cookie crust and layers of creamy butterscotch pudding and Cool Whip. It’s a wonderful make-ahead dessert for a potluck or party!

The flavor of butterscotch has been a favorite of mine for as long as I can remember. As a child, my mother used to make butterscotch pudding. The same pudding that I use for this recipe. I also use it in this No-Bake Butterscotch Pie recipe.

How To Make
(More detailed instructions in recipe card below.)
- Make the Crust. Process the cookies in a food processor until finely ground. Note: If you don’t have a food processor, place them in a large zip top bag and crush them with something heavy. Then mix together crushed cookies, melted butter, and flour. Press in the bottom of a 9×13-inch pan and bake for 8 to 10 minutes. Let cool.
- Make the Cream Cheese Layer. Beat cream cheese and confectioners’ sugar. Then mix in 2 cups of Cool Whip.
- Make Butterscotch Pudding Layer. Mix pudding mix with milk and spread on top of cream cheese layer.
- Topping– Spread Cool Whip on top. Top with chopped pecans.

Recipe Tips
- Make at least 4 to 6 hours ahead of time.
- Be sure to soften the cream cheese fully so that it will mix in evenly and not be lumpy.
How To Serve
Lush desserts like this Butterfinger Lush, are always popular. They’re a breeze to make, can be prepared in advance, and are great for feeding a crowd.
Since they are served chilled, they are ideal for summer parties. So refreshing to take a bight of those cool and creamy layers.

I’m a huge fan of butterscotch pudding. The butterscotch layer gives this dessert most of its flavor, but it is complemented by the pecan crust and creamy cream cheese layer, plus the light and creamy whipped topping layer.
Sprinkle a few chopped pecans on top and you have the perfect summer dessert for butterscotch lovers. 🙂
