Chipotle Cream Sauce

The chipotle cream is a cinch to make. It’s just a mixture of mayonnaise, sour cream, lime juice, a little milk, chipotle peppers plus some adobo sauce from the Chipotle Peppers. You can change the ratio of mayonnaise to sour cream or use all mayo or all sour cream. Any way you do it, it’s going to turn out delicious.

How To Grill Corn

There are many different methods for grilling corn. You can either completely shuck the corn which is what I typically do, or partially shuck the corn (remove the silks). If leaving the husks on, be sure to soak in water for 30 minutes before grilling so they don’t catch in fire.

Make It Spicier

The chipotle peppers add some smoky heat. If you want it spicier, either serve with your favorite hot sauce or sprinkle with a little cayenne pepper or crushed red pepper flakes.

How To Choose Fresh Corn

When choosing corn, look for heavy ears that have green, tightly wrapped husks. The silks should be moist and golden, but it is alright if they are brown right at the tip. The kernels should look plump.

Recipe Tips

  • Ideally corn should be eaten within 24 hours of being picked. The sugar in corn begins to convert to starch after it is picked, making it less sweet and tougher over time.
  • Don’t shuck corn before storing it.
  • Having trouble removing the cornsilk? Rub it off with a damp paper towel.

    Grill corn on grill with lid covered for 10-15 minutes, turning to char all sides.
