Root Beer lovers will be smitten with this Chicken with Root Beer Glaze. The glaze is a wonderful combo of sweet and spicy. The sauce can be made ahead of time and then this recipe quickly cooks up for a weeknight dinner.

Root Beer is not just for drinking! And that’s a good thing because I’m not a fan of drinking Root Beer, but I do buy it because my son loves the stuff. I wanted to give cooking with it a try because I hate to not like something and I thought it might be more palatable in food form. And it was.

Not only does the root beer help give the glaze a nice deep caramel color, it gives a nice zip to the flavor.
Recipe Tips
If your jalapeno is really spicy, you may not want to add the whole thing. You be the judge. You can always add more but you can’t take away. 🙂
Boneless, skinless chicken thighs can be used instead of chicken breasts.
Cook this chicken on either a grill pan or a gas grill.

Combine all ingredients except chicken in a heavy-bottomed saucepan. Bring to a boil and then reduce to a simmer. Simmer for 10 to 15 minutes or until glaze is thick enough to coat the back of a spoon. Season to taste with salt and pepper.

Heat grill pan or gas grill over medium high heat. Drizzle just enough olive oil on the chicken so that it will not stick and season with salt and pepper.

Place chicken on grill pan and cook 2-3 minutes. Flip over and coat the top side with glaze. Cook 2 minutes and turn over. Coat other side with glaze. Continue to coat with glaze and flip until chicken is cooked through.
