Two large onions cooked in butter form the base of the gravy. A little thyme and tomato paste add additional flavor.

French Onion Salisbury Steak Recipe Tips

  • I like to use ground beef that is 80 to 85% lean. Any leaner and you won’t have enough fat to keep the patties really juicy.
  • Optional- add 1/4 cup of red wine to the gravy when you add the broth.
  • You need one large skillet/pan for this recipe. You’ll cook the patties in it and remove them, leaving all the juices for flavor. Then cook the onions, make the gravy, and return the patties to the sauce. Add the cheese and simmer utnil the patties are cooked through and the cheese is melted.

Equipment Large Nonstick Skillet

Steps

  1. 1

In a large bowl, mix together ground beef, egg, Panko crumbs, Worcestershire sauce, garlic powder, salt, pepper, and parsley.

  2. 2

Shape mixture into 5 oval patties.

  3. 3

Heat 1 teaspoon of oil and 1 teaspoon of butter in a large nonstick skillet over medium-high heat. Add beef patties and cook 4 minutes per side. Remove from pan and set aside.

  4. 4

Add the 4 tablespoons of butter and melt over medium heat. Add onions and cook, stirring frequently for 10 minutes. Turn heat down if they start to burn. Stir in the sugar when they are about halfway cooked.

  5. 5

Sprinkle the flour into the skillet. Cook and stir for 1 minute.

  6. 6

Gradually whisk in the broth and bring to a simmer. Stir in the tomato paste and thyme.

  7. 7

Place ground beef patties back in skillet. Check gravy for seasoning and add salt and pepper to taste.

  8. 8

Sprinkle a little Parmesan cheese on top of each patty.

  9. 9

Fold each piece of Provolone cheese and half and place one on top of each patty.

  10. 10

Turn heat down to low. Cover pan for a minute of two to melt the cheese. You can use aluminum foil if you don't have a lid.

Notes

Instead of using a nonstick skillet, a cast iron pan works really well for this recipe.
