How To Store Irish Soda Bread
Like most homemade breads, Irish Soda Bread can dry out quickly and easily and is best eaten shortly after baking. It can be kept for 3 to 4 days at room temperature if wrapped up well. Or it can be frozen for up to 2 months.
Recipe Tips
You can use either raisins or currants. I prefer the flavor and texture of currants but they can be hard to find.
Measure the flour correctly. Firts fluff it some up in the bag. Then gently scoop it with a large spoon into a dry measuring cup. Overfill slightly and run the back of the knife acorss the top to remove excess.
I don’t know why this bread is only popular for St. Patrick’s Day. It’s such a delicious bread and should be enjoyed all year long. This bread has so much flavor it’s hard to believe it’s a no-yeast bread.

Preheat oven to 350 degrees and grease a baking sheet.

In a large bowl mix together flour, brown sugar, baking soda, baking powder, and salt.

Add butter, egg, and buttermilk. Stir together with a wooden spoon until it forms a dough. Add the raisins.

Knead the dough a few times in the bowl. Shape into a round and place on prepared baking sheet. With a knife, cut an "X" in the top of the dough.

Stir together the 2 tablespoons of buttermilk and melted butter in a small bowl. Brush the top of the bread with this mixture.

Bake for 50 to 60 minutes, brushing with the butter mixture every 15 minutes. If bread starts to get too browned, cover loosely with foil.
