I don’t think nachos get any better than these BBQ Brisket Nachos. Crunchy tortilla chips covered with shredded beef brisket and cheese plus all kinds of toppings. These nachos are totally customizable so that the whole family will enjoy them. Ready in just 15 minutes when you have leftover brisket on hand, making them perfect for game day, movie night, or an easy weeknight meal.

But honestly, is there any more perfect food for game day? I don’t watch much football. OK, I don’t watch any football. But I’m not opposed to helping other people stay well fed while they watch football.

The Brisket recipe I use for this makes the smokiest brisket, so tender and juicy. You’d never guess it was completely cooked in the oven.

You could also use pulled pork or pulled chicken for this recipe, but I’m telling you this brisket can’t be beat.

The brisket has been cooked in a sweet and a little spicy BBQ Sauce and I love how it tastes with some crunchy, salty tortilla chips. Add some gooey cheese, corn, sour cream, onion, cilantro, and jalapenos for out of this world nachos!

Ingredient Notes

The Best Tortilla Chips

Choose thick, restaurant-style tortilla chips. Thin chips tend to break once loaded with toppings.

Cheese

Freshly shredded cheese melts much better than pre-shredded cheese because it doesn’t contain anti-caking agents. A combination of cheddar, pepper-jack and/or Colby Jack cheese works well.

Leftover Brisket

If your brisket has been refrigerated, warm it with a little extra BBQ sauce before adding it to the nachos.

Use Cast Iron

These Cast Iron Servers are perfect for heating and serving nachos. The cast iron really retains heat well and will help the nachos stay warm until the last one gets eaten. A cast iron skillet also works well. If you don’t have cast iron, make the nachos on a rimmed baking sheet.

Add Lots Of Toppings

Not only does this nacho recipe make the perfect gameday spread or party appetizer, it is perfect to customize and you can add all your favorite toppings. Pinto beans, guacamole, queso, green onions, and jalapeno all work well.

Recipe Tips

  • Don’t use thin tortilla chips. You want a really sturdy tortilla chip so the weight of the toppings doesn’t break the chips.
  • Use your favorite BBQ Sauce. I like one that is fairly thick, sweet and tangy like Sweet Baby Ray’s.
  • Rewarm the leftover brisket before adding it to the nachos.

Storage

Nachos are best enjoyed immediately after baking. Store any leftover toppings to make an additional batch at a later time.

    Preheat oven to 375 degrees.

    If BBQ Brisket is dry or doesn't have much sauce, toss it with a little BBQ Sauce.

  3. 3

    Spread tortilla chips out on a baking sheet or cast iron pan.

  4. 4

    Top with brisket, corn, and cheese. Place in oven until cheese is melted.

  5. 5

    To serve, top with red onion, pico de gallo, cilantro, and sour cream.

Notes

The toppings can be customized. Other great choices are pinto beans, guacamole, jalapenos, and green onion.
