Loaded Mashed Potato Casserole
Loaded Mashed Potato Casserole tastes just like a loaded baked potato, but much better. So creamy and cheesy with salty crumbled bacon sprinkled on top.

Loaded Mashed Potato Casserole takes mashed potatoes to a new level. Cream cheese, butter, and sour cream make it sinfully rich and creamy. A few green onions and some salty and crispy bacon give it the taste of a loaded baked potato, but much, much better. It’s the perfect addition to a holiday meal and can even be made with leftover mashed potatoes.

Today I’m super excited to tell you about a way we can all join together and help feed thousands of hungry children. Because as much as I wish everyone had Loaded Mashed Potato Casserole on their dinner plate, the sad truth is many people, including children do not even have a dinner to eat at all.
But it ’tis the season for giving and this year we can all help Challenge Dairy and UNICEF feed hungry children and raise awareness for childhood malnutrition by pinning a recipe from the Pinterest Board . For every recipe pinned from this board, Challenge Dairy will donate a meal for a child in need to the UNICEF Foundation. Challenge Dairy has committed to donating up to 75,000 meals through this campaign which runs from November 15-December 31, 2105.

It is estimated that childhood malnutrition results in the unnecessary loss of nearly 3 million lives a year and approximately half of all deaths under the age of 5 are due to malnutrition. Those numbers are staggering. I don’t know about you but I have a hard time even wrapping my head around them.
Challenge Butter has provided UNICEF with ready-to-use therapeutic foods (RUTF) which include dairy-based pastes and powders for the severely malnourished. Challenge was the first US food company to provide RUTF products for the Caribbean, Central America, and Asia and they have a greater than 20 year history of developing and providing humanitarian aid products.

In addition to telling you about this UNICEF Campaign, I am also excited to tell you a little about Challenge Butter. Challenge Butter is new to my market (I am in the vicinity of Charlotte, NC) and until recently I had not tried it or even heard of it. But now it is the only butter I will buy and I am so glad it has become available in my area.
Challenge Butter is made the old-fashioned way and is 100% real cream butter with nothing artificial. Challenge is the only dairy product company that controls the entire process of making butter- from milking the cows, to transporting the milk, making the butter, and packaging.

You can’t find fresher tasting butter than Challenge Butter. They use fresh milk and cream from local dairies and get the butter from farm to fridge in just 2 days.
Challenge uses no hormones, additives, or fillers and was the first brand to make dairy products without growth hormones. With Challenge Butter you have a superior tasting butter that you can feel good about buying for your family.
They also make a super creamy tasting cream cheese!

Don’t forget to provide a meal for a malnourished child by pinning a recipe from the
“Pin a Recipe, Feed a Child” Board.
